The union of two experimented chefs, Angel Carbajal and Massayuki Nikura, gave birth to a chain of restaurants under the name of Nick-San, a fusion of two cultures (Mexican and Japanese), that combining talent and creativity have accomplished a development and expansion in Mexico since 1994, originating a menu not only attractive but unique in many ways.

Chef Angel Carbajal’s experiment has turned Japanese cuisine into an interesting fusion and very well accepted by demanding palates, with the fine mixture of some Mexican ingredients (like different kinds of pepper, tropical fruits, coriander and other fine herbs), searching to innovate and make true works of art out of every dish, qualified this way by German painter Peter Mussfeldt, client and friend. Perched on the edge of land that divides the Sea of Cortez and the Pacific Ocean is the culinary jewel of Los Cabos. Nick-San has been shedding a new light on the definition of sushi since its opening, nine years ago.

Owners Angel Carbajal and Masayuki Niikura have combined skills to mesh all that is sacred in Japanese cuisine with local Mexican elements at their finest. Giving new meaning to the saying. “Location is everything”, Angel Carbajal has an advantage unlike most sushi chefs worldwide as he couples French and Japanese culinary expertise with fishing mastery, controlling all aspects of quality from the waters to the table.





French technique is reflected in truly unique signature sauces with the use of local spices and produce. Though wassabi and ginger are always available, many dishes present variations on these flavor elements of heat and pungent using traditional Mexican forms such as minced habanero and red onion, fresh fruits and herbs. You’ll see the local influence in the lobster roll, balanced with crunchy Lobster, mango and avocado. Large sea scallops are graced with lemon olive oil and thin slices of fried garlic. Oysters are marinated in sweet sake ponzu. Anything from delicate cilantro citrus sauce to Serrano chilies and spicy oils perfectly punctuate yellowtail and toro. With many insistent inquiries, some sauces are available for sale in quantity but secrets are never shared. Soft lighting, sleek white walls and a long hardwood bar create a calm, casual energy. One can come in from the beach or dress for a special occasion and feel comfortable. Twenty years ago, Nick-San introduced Los Cabos to authentic Japanese food and a one-of-a-kind brand of Japanese–Mexican fusion. That innovative spirit has continued. In 2012, the family behind Nick-San debuted its own tequila and wine—and, more recently, a champagne bar—always teaming with the best producers to provide clients with the best quality. Read on to learn about the history of these beverages and how they are being interpreted at Nick-San.
Tequila: The Spirit of México

Tequila is the most famous and representative Mexican beverage. Though known around the world, tequila is still an enigma to many: Not everyone understands what it takes to produce this beverage.
Tequila is the name of a town in the state of Jalisco, México. The town is the most recognizable producer of tequila and the agave plants needed to produce it. Contrary to popular belief, though, there are other regions legally authorized to produce tequila. These regions include greater Jalisco and specific municipalities within Nayarit, Michoacán, Tamaulipas, and Guanajuato.
The production of tequila is expensive, and it must be done delicately. The agave tequilana Weber, variety azul (Weber Blue Agave), plant takes seven years to grow, and most used to produce tequila are seven to 10 years old in order to obtain the best flavor and qualities. In order to have real tequila, it is important to follow some rules to ensure the quality and origin of the beverage. Tequila must be made from no less than 51 percent Weber blue agave. Higher quality or high-end tequilas are made from 100 percent Weber blue agave, as shown on the label. The aging must be in oak barrels. There may be maturation rooms, but these need to be within the designated regions.
In 2012, Nick-San made the bold choice to create its own brand of tequilas. As with all of its menu items, the restaurant wanted to provide guests with the highest-quality products available. So it partnered with Tequilas González Lara to produce three varieties:
Nick-San Silver or Blanco: This is perfect to pair with citric, creamy sauces and fresh salads. Consider pairing it with the yuzu sashimi, cilantro sashimi, tuna tostada, or the tomatoes-and-fresh-wasabi salad.
Nick-San Aged – Reposado: This is great to pair with seafood. Try it with the Black & White Sashimi, Fish Kara Age, and Chasoba. Nick-San Extra Aged – Añejo: Pair this variety with desserts, chocolate, or meat. Try it with the Beef Serranito, eel roll, or sesame ice cream.
Tequilas-Nick-San-37Wine: A Good Pour
While wine has always been present in Europe, only in recent decades has it taken off in Southern Baja. The Guadalupe Valley in Northern Baja can take much of the credit for that. And people are becoming more familiar with—and enjoying more and more—good pairings of wine and a great meal.
For that reason, a couple of years ago, Nick-San decided to debut its own house wines to offer clients a wine of good quality and value that pairs perfectly with the menu. Wine does not always have to be expensive to be enjoyed. The process of finding and fine-tuning took a long time, but Nick-San eventually adopted two wines.
The first is a white wine from the Guadalupe Valley; it’s a fresh and fruity blend of sauvignon blanc, chenin blanc, and Colombard grapes. It has a nice gold color, and it is fresh in mouth and nose with notes of citric fruits and minerals. This is the perfect companion for seafood or white meat. Try it for a summer lunch—or basically all year in Los Cabos—with the Oysters Ponzu, the Hamachi Sashimi, or the popcorn shrimp.
The second, a red, comes from Côtes de Bordeaux in southern France. La Grange Clinet is a more structured wine with character. It is a combination of merlot, cabernet sauvignon, and cabernet franc. This wine is a fruity red wine with intense notes of blackberry and hints of flowers and vanilla. This is a great wine to pair with red meat, spices, and grilled fish. Try it with Lobster Sambal, Hamachi Yaki Onigiris, cilantro onigiris, curry fish, or even Nick-San’s chocolate cake.
Champagne: A Touch of Bubbly
The world’s most glamorous drink is universally employed to toast special celebrations. It is produced exclusively in the Champagne region of France, where the only grapes used are chardonnay, pinot noir, and Meunier. There are two types of champagne that most people know, blanc and rosé. The first is made with the three authorized grapes without the skin to prevent from coloring the champagne, and the second one is produced with the skin of the pinot noir, which is a red grape to give the color “rosé.” Depending on the sugar content, you may have seven types of champagne, ranging from less sweet to sweetest: brut nature, extra brut, brut, extra sec, sec, demi sec, and doux.

Types of Tequila
Blanco/White/Silver: Clear, un-aged tequila that is normally bottled right after being distilled or matured for less than two months.
Joven/Gold: A white tequila that has not been left to rest or mature but to which colorants and flavorings have been added. These tequilas can be made with 100 percent agave but are more often made with 51 percent mixed tequila.
Reposado/Aged: Tequila that has remained in wood barrels for at least two months but no longer than a year.
Añejo/Extra Aged: Only bottles that have been aged for at least one year in an oak barrel can be labeled añejo, or extra aged.
Extra Añejo/Ultra Aged: The newest tequila classification requires tequilas be aged for a minimum of three years.

SPECTACULAR SUSHI SOUTH OF THE BORDER IN LOS CABOS

Six thousand miles separate Japan and Cabo San Lucas. The two countries and cultures could not be more different. Yet, here in the coastal desert at the tip of Baja you'll find a little piece of Japan that even the Japanese would envy... Nicksan Japanese restaurant.

Nearly twenty years after its opening, Nicksan still remains the most popular Japanese restaurant in Los Cabos, with good reason. Owned by Angel Carbajal and Masayuki Nikura, the restaurant produces one of the most creative menus you're likely to find anywhere. From sushi to tempura, this place has it all when it comes to Japanese cuisine. But it's the special touches influenced by Angel's devotion to traditional Mexican cooking that makes it unique.

TRADITIONAL SUSHI MEETS MEXICAN INFLUENCES
The focal point of most Japanese restaurants is the Sushi Bar and that rule carries through to Nicksan. The sushi bar reinforces part of the cuisine's allure - the art that is its preparation. Razor sharp knives meet butter soft seafood, and when the two come together in Angel's masterful creations, taste buds cheer.

While an accomplished chef, Angel didn't start out as a Sushi master. The journey from novice to his present status as a top chef in Mexico started with a chance meeting with his future partner, Masayuki Niikura. Masayuki ventured down to Cabo in 1986 with his wife Kasue and some friends. Angel was then working as chef at Senor Sushi; a then popular seafood restaurant in Cabo that was often so busy that finding an open table took timing and luck. That's how it was the night the two met. Masayuki asked Angel if he could return the following night and use the kitchen to prepare dinner for his wife and friends. Angel accommodated the unusual request.

The following night, Masayuki was in the kitchen prepping ingredients for a variety of sushi he planned on serving his group. Soon, early diners began to show up and before you could say mas Sake he was serving his creations to guests at the bar. After serving his wife and friends, Masayuki and Angel had the opportunity to escape and have a drink together. The conversation turned to Masayuki's sushi and with little formality, Angel was invited to Los Angeles to learn how to craft those delicacies at Masayuki's restaurant – a placed called Kushiyu in Tarzana, California.

What began as a casual relationship became a close friendship and business partnership. Several trips to visit with and learn from Masayuki led to a much longer journey... Japan. Twelve years after their first meeting, Angel made his way to the island nation where his education in all things Japanese continued. The two visited many fine restaurants where more concepts of Japanese cuisine formed in Angel's already creative mind. Trips to Japan's many fish markets exposed him to the great possibilities that spawn from the oceans.

Perhaps most influential was a dinner held at the home of Masayuki's brother, a commercial fisherman whose passion for the sea also extended to the dinner table. Angel was overwhelmed by a table set for fourteen loaded with all types of fresh seafood, most caught by Masyuki's brother, prepared in ways he had yet to see. Great food, great Sake and lots of cerveza made for an impressive meal that left a lasting impression on Angel. Armed with new ideas, Angel returned to Cabo and the two opened the first Nicksan, and like they say, the rest is history.

A SPECIAL NIGHT OF SUSHI WITH CHEF CARBAJAL
One hot and humid night in September found us sitting with Angel for a few moments before he advised that menus would not be necessary, he would prepare our dinner for us personally. While group after group entered the restaurant, we had the pleasure of watching Angel at work. For starters, Negi Maguro - a perfect tuna loin seared in a mixture of chives, garlic and miso butter sauce. Stacked high on a stark white plate, it is as beautiful as it is delicious. Next, Sashimi Serranito - half moon bay scallops from San Carlos in Baja served with Serrano Chile oil, soy sauce and drops of lemon. Spicy, sweet and presented with paper thin slices of chiles the dish is perfectly accompanied by Jyunmai Ginjo Sake served ice-cold as opposed to hot. Connoisseur grade Sake is always served cold, lower grade Sake's are served hot to improve the taste. Although I truly enjoy hot Sake, the flavor and finish of the Jyunmai was outstanding.

Dish after dish appeared including a version of spring rolls created by Angel and a wonderful Clear Lobster Roll – tempura lobster with sliced avocado, green mango, cilantro, sprouts, mixed organic greens, Tobico roe and a spicy Japanese mayonnaise sauce wrapped in soy paper and served atop Yuzu curry oil. A masterpiece to look at and a true gastronomic marvel, the melding of typical Japanese flavors with the fresh, aromatic qualities of cilantro and the sweetness of the mango was one of our personal favorites. Soft Shell Crab finished off the dinner as we had no room left in our very satisfied bellies.

THE STAFF MAKES THE MEAL EVEN BETTER
After dinner, a trip to the bar is always in order and who are we to fight traditions. Nicksan's bartenders are excellent mixoligists who have a flare for dressing up drinks with cosmopolitan style. Try one of many martinis served in truly unique stemmed glasses or ask the bartender to surprise you. Between their outgoing stage-like personalities and the lively libations poured, ending the night at the bar was just what the doctor ordered.

The success of Nick San has not gone unnoticed by the major players in the Cabo's resort business. Since we first wrote this review, Angel has opened new locations and now brings his talents to the Tiendas de Palmilla plaza off the corridor across from the One and Only Palmilla. He's also taken Nicksan to Mexico City and Nueva Vallarta.

Imagine a fresh seafood restaurant specializing in the best of Japanese cuisine yet flavored with a spicy assortment of Mexican ingredients. Where plating and presentation are as artistic and sensory as the dishes are delectable. The result is Nicksan, an ingenious menu and luscious variety of sashimi, nigiri, sushi, tempura and fresh seafood – all with a Mexican twist.



This cultural tango of dueling cuisines is the brainchild of executive chefs and owners Angel Carbajal and Masayuki Niikura. However, the dueling concept of cuisines actually ends up being a symbiotic relationship of complementing flavors. Portions are served family-style and are meant to share, which works out great for tasting more of the many outstanding menu selections. The Nicksan location at the Shoppes at Palmilla is the newest addition with the original restaurant located in Cabo San Lucas. Both locations feature the same menu. However, with the proximity of Nicksan to the exclusive and celebrity-favorite resort – Palmilla – the One and Only, don’t be surprised if you happen to spot a stray celeb hankering for Mexican-inspired sushi. Specialties include sea bass filet with citric oils, tuna pokki, and chasoba shrimp – a dish of uji green tea pasta with sautéed shrimp, green curry, lemon grass and ginger – a fast favorite with my two college kids. A customer-favorite is the Tuna Tostado, a rice cracker tostada decked with fresh yellow fin tuna belly, topped with avocado, salsa, sesame seeds, and blessed with a habanero red onion sauce. (The special salsa is a signature of the restaurant; blended with a touch of wasabi it provides a delightful kick to this appetizer.)Be sure to try the Goyto Age, a deep-fried tempura California chili stuffed with crab and topped with a special sesame dressing. Another treat is the Scallops Dinamita – a dish served in a scallop shell consisting of baked scallops from the Sea of Cortez and stone crab mixed with white mushrooms, masago, chives and a spicy red sauce. One of my favorites is the lobster roll with lobster tempura, fresh greens, mango sauce, black sesame and a mustard sauce. And you can’t go wrong with the lobster and shrimp tempura with vegetables. Because Nicksan is popular with the locals as well as seasoned travelers, reservations are recommended, especially on weekend nights and during high season.

Favorites include the lobster roll (with cilantro, mango, mustard, and curry oil), lobster sambal (marinated in sake with soy, ginger, and garlic), and the tuna tostadas served on rice crackers with avocado. The gyozas stuffed with shrimp and scallops—also find their way on most of the tables. Hot dishes like the chile age, a California chile stuffed with spicy crab and sesame sauce, and a seabass in miso and white mushroom sauce, offer even the most fickle diners plenty to marvel at.

It´s cuisine is still a fusion of Mexican ingredients and traditional Japanese cuisine with a touch of more sophistication in the techniques used to prepare our new dishes.
In every plate you may find the passion of the group of Chefs that work at Nick San to delight the clients´ palate, to show new culinary experiences as well as flavors and emotions. All this ingredients have led to the creation of our franchises, six in various parts of Mexico, which only have the purpose of exceeding the client’s expectations.
We offer a wide variety of fresh fish to be tasted either in sashimis or nigiris as well as in our special and new creations, that many times happen at the same very moment when the clients decide they want to try the special of the day. Also you may taste our great selection of sakes, Japanese beers and house wine (sauvignon blanc, and coming soon our special edition of La Grange Clinet merlot), which will be great to accompany our various creations, such us our Gorgonzola Shrimps, Truffle sashimi, lobster roll, Shoyu roll, salmon tartar, just to name a few.
